Once harvested, the sea vegetable is gently dried and cut into convenient flakes, preserving its deep olive colour and authentic, salty umami flavour. For Ocean Infusions: Steep the flakes in hot water (not boiling) to create a traditional, earthy herbal tea. Add a sweetener of your choice or add a dash of lemon or lime juice.
